Mexican Bean Soup

Preparation time: 25 min
Cooking time: 1 hour 5 min
Serves: 8

1 cup Mexican beans
2 420 gm can 4 bean mix rinsed and drained
1/2 cup red capsicum diced
1/2 cup green capsicup diced
1 onion diced
1 and 1/2 cups potato diced
1 cup celery sliced
1 teaspoon garlic
1 teaspoon cumin
1 teaspoon corriander
2 vege stock cubes
9 cups water
1 pack (35gm) taco seasoning

Spray pan with a little olive oil. Add garlic, onion, capsicum, celery and potato and cook for 1 minute.

Add cumin, coriander, taco seasoning and vege cubes. Cook for 2 minutes.
Add remainingingredients. Bring to boil.
Reduce heat and simmer 1 hour.
Blend ingredients with bamix or potato masher. Serve with crusty bread. YUM!!!!!
