Muffins


Preparation time: 20 min
Cooking time: 25 min (depends how many trays can fit in your oven!)
Makes: 12 muffins

2 & a half cups SR flour
Quarter cup castor sugar
2 teaspoons baking powder
2 eggs
1 and half cups milk
160g butter

Preheat oven 190oC, brush 12 pan muffin pan with butter or oil.
Sift flour, sugar and baking powder into a bowl. Make a well in centre/
Add the combined beaten eggs, milk and butter. Stir with a wooden spoon until almost smooth. The ingredients should be moistened/ Spoon the mixture evenly into the tins
Bake 22-25 minutes or until golden brown/ Loosen muffins from tin, cool on wire rack.

NOTE;Add about 155g fresh berries 9blueberries, raspberries) for berry muffins.

VARIATIONS

FOR CHOC CHIP MUFFINS;Sift 2 tablespoons cocoa powder in with the flour
Add 250g chopped chocolate or chocbits after the egg mixture. I don't use as much though, I use about 80-100g. ENJOY!

BANANA MUFFINS Replace caster sugar with raw sugar and decrease the butter to 100g. Add 2 teasp ground cinnamon, i cup mashed banana and 3 teasp grated orange rind when adding the liquid. These can also be made using 1/2 

wholemeal flour and 1/2 white
